If I eat lunch quickly and don't do much else I have time to bake on my lunch break. This is a wonderful thing. Today I decided to make cookies. I started out by following this recipe, but after realizing I didn't have some of the ingredients I started quite liberally changing it. Here is what I ended with:::
Chocolate Chip Peanut Butter Oatmeal Cookies!
1 1/4 c old fashioned oats
1/2 c whole wheat flour
1/2 tsp salt
1/2 tsp baking soda
1 1/2 tbs cinnamon
2 banana
2 tbs melted butter
6 oz dark chocolate chips
8 tbs peanut butter
1/4 c honey plus a little more
Preheat oven to 375
Mix the oats, flour, salt, baking soda and cinnamon in a large bowl. Mash bananas and butter in a separate bowl. I mushed them with my hands and then used a mixer. Mix the banana-butter blend into the dry ingredients. Add in peanut butter, mix, then the chocolate chips. Add the honey. I wanted it a little sweeter so I added extra honey. Scoop out small clumps onto a cookie sheet. It is really sticky, but don't worry. Keep it together as best as you can. Bake 10-15 minutes.

I am definitely going to make these cookies. They sound delicious and not to unhealthy!! That's my kind of cookie!
